Wild & Native yeast.

We love the idea that natural yeasts found in orchards ferment our cider.

We prune and manage our trees to allow a healthy, natural and balanced canopy to develop that stays dry and full of wind and sunshine. This limits mould yeasts. Scientists that visited our farm suggested we probably have over 300 types of yeast in our tree canopy.

We cannot grown our trees in high density New World eating apple orchard style. The narrow rows of tree hedges lead to mould, and the regular use of fungal sprays.

We do not aim to grow large amounts of cheap fruit that we contaminate with (even organic) chemicals.

We need our fruit to be entirely natural, growing in a well balanced and natural canopy, with a healthy coating of our amazing farm yeasts.
