TRADITIONAL EUROPEAN CIDER
At The Denmark Heritage Cider Company we believe that
Fine Cider is made in the Orchard
We manage our Heritage Cider Apple Orchard to deliver cider that reflects our unique Great Southern terroir
We use traditional open canopy orchard methods allowing the the fruit and native yeasts to develop naturally
Our Ciders are fermented in a "5 star" James Halliday Winery, combining grape winemaking skill, with premium Heritage Cider apple juice
We do not use Apple Concentrate
We do not use reject eating apples from packing sheds
WILD ABOUT YEAST
We believe in discovering something natural and new, not in complex processes that conceal differences
For over a decade our tree canopy has been nurtured to provide a home to a vibrant population of Native Yeasts
Each year the assembly of yeasts changes, driven by the ebb and flow of our environment
Each year the Native yeasts impart different character and flavour
Brewers of Craft Beersand a New Wave of Winemakers are joining us on a journey to discover the almost limitless possibilities of Traditional Native Ferments
OUR JOURNEY
The Denmark Heritage Cider Company was established in 2006 with a vision to establish a unique orchard of cider apples to naturally produce classic European Style Fine Ciders.
We believe that a traditional European fully fermented Fine Cider provides an exciting alternative to sweet, low alcohol "made from concentrate" Australian Ciders.
In 2008 we planted our first 4500 trees, adding another 3000 trees in 2009.
Our first harvest was in 2013, when a little over 1500 kg of fruit was used to produce a very distinctive and very popular Scrumpy.
Encouraged by our first production we moved to craft our first sparkling vintage in 2014 and we have continued to produce Fine Ciders that reflect each vintage.
“Quality ... you know what it is, yet you don't know what it is. But that's self-contradictory. But some things are better than others, that is, they have more quality. But when you try to say what the quality is, apart from the things that have it, it all goes poof! ........ What the hell is Quality? What is it?”

OUR FOOTPRINT
Sustainability, and our role as the carers for the land is at the heart of everything we do.
We cannot bring back the giant trees and the rainforest that once covered our land, but we can limit future damage by working in harmony with our native plants, animals, and fungi.
Our methods are passive, and designed to return carbon to the earth.
We do not practice intensive farming that destroys our ancient soils, releases carbon, and contaminates our creeks and inlets with unwanted chemicals.
We have hosted visitors form the USA, Europe, and Asia, keen to learn our methods and return home to begin their own similar projects.
We firmly believe that by taking care of things - with love - that we will arrive at something worthwhile.
